The History of the Sicilian Cannolo

The Sicilian cannolo is one of Sicily's most famous desserts worldwide.

Its origins are very ancient and, like many Sicilian culinary products, are linked to the various cultures that have passed through the island.

The most widespread version of the story traces its origins to Arab Sicily, between the 9th and 11th centuries. During this period, new ingredients and pastry techniques arrived on the island, including the use of sugar, ricotta, almonds, and citrus fruits.

One tradition holds that the cannolo originated in convents, where nuns prepared elaborate desserts using ricotta.

Another tradition links it to the city of Caltanissetta, where the Arabs are said to have influenced the birth of this dessert.

The truth is that there is no definitive proof establishing a single origin, but it is precisely this combination of influences that makes the cannolo so representative of Sicily.

Where does the name "cannolo" come from?

The name probably derives from "canna" (cane), because in ancient times the wafer was rolled around small pieces of cane during preparation.

The shell is fried until crispy and full of tiny bubbles.

Then comes the heart of the cannolo:

🤍 sheep's milk ricotta

🍬 sugar

🍊 candied fruit

🌰 pistachios or chocolate chips

And above all, a fundamental rule of Sicilian tradition:

the cannolo must be filled fresh.

Because the crunchiness of the shell and the creaminess of the ricotta must meet right when you eat it.

🇮🇹 From Sicily to the world

The cannolo has become one of the symbols of Sicilian pastry making and is now known practically throughout the world.

But the true Sicilian cannolo is more than just a recipe.

It is the result of centuries of history, of cultures that have met, and of generations of pastry chefs and Sicilian families who have kept the tradition alive.
